Bomb Diggity Tortillas: by Veronica Barrientoz

INGREDIENTS:

  • 2 cups in bleached all-purpose organic flour
  • 1 tsp of aluminum-free baking powder
  • 1/2 tsp of fine grain salt, or sea salt (for taste)
  • 1/3 cup of HempMEHemp® Organic Oil
  • 1 cup of warm filtered water

DIRECTIONS:

  1. Whisk the flour, salt, and baking powder together in a mixing bowl
  2. Mix in Help Me Hemp's Oil with your fingers until the flour resembles cornmeal
  3. Add the filtered water and mix until the dough comes together
  4. Place dough on a lightly-floured surface and knead for a few minutes until smooth and elastic
  5. Cover with a tea towel and let rest for 10-15 minutes
  6. Divide dough into 15-18 equal pieces
  7. Roll each piece into a ball
  8. Cover with a tea towel and let rest for 10-15 minutes
  9. Preheat a large skillet over medium-high heat
  10. Use a well-floured rolling pin to transform dough ball into a thin, round tortilla
  11. Place tortilla into the hot skillet
  12. Cook until tortilla begins to bubble
  13. Flip tortilla and continue cooking until desired golden color on both sides
  14. Place the cooked tortilla in a warmer
  15. Continue rolling and cooking the remaining dough
  16. Allow the tortillas to cool completely and serve

NOTES FROM THE AUTHOR:

I prefer to store in plastic wrap or a gallon-size plastic bag in the refrigerator. I place all ingredients into a kitchen aid mixer with the dough hook and mix until it all comes together. Kneed it on a well-floured surface and put the dough back into the kitchen aid bowl. Cover with a tea towel and let it rest for 10-15 mins. Then proceed from Step 6.
